Chocolate & Kale Granola

This granola is so satisfying!

Kale is a nutritious food rich in antioxidants, vitamins C and K, and beta-carotene. It also contains nutrients that can support eye health, weight management, heart health, and more.

Preparation time: 10 mins, plus dehydrating time

Serves: 5-7 servings

Ingredients:

  • 1/2 cup almond butter

  • 1/4 cup water

  • 1/4 cup yacon syrup or coconut nectar

  • 2 tbsp cacao powder

  • 1 tsp vanilla

  • pinch of salt

  • 3 cups kale, finely chopped with stalks removed

  • 1 1/2 cups sprouted buckwheat

  • 1/3 cups cacao nibs

Method:

  • Blend the almond butter, water, sweetener, cacao powder, vanilla and salt

  • Add to a bowl with the kale and massage to soften the kale. Add the buckwheat.

  • Spread on a couple of teflex sheets and dehydrate for 12-24 hours until crisp

  • Add the cacao nibs
