Goji Berry & Chocolate Biscuits

Chocolate and goji berries are the perfect combination for taste and goodness.

Lovely with a cup of herbal tea or as on-the-run food. For a lighter version, try the flax and goji without the chocolate dipping.

Preparation time: 20 mins

Serves: Makes about 50 biscuits, depending on size

Ingredients:

  • 2 cup flax seeds

  • 1 1/2 cup goji berries

    Chocolate coating:

  • 150g cacao liquor

  • 150g cacao butter

  • 1 tbsp cacao powder

  • 2 tbsp vanilla extract or powder

  • pinch sea salt

  • sweetener of your choice to taste – yacon syrup, coconut nectar or coconut sugar

  • bee pollen

Method:

  • Soaked the flax seeds and goji berries together for a few hours or overnight in a large bowl

  • Mix the goji berries a flax seeds thoroughly. Spread on teflex sheets and mark into oblongs

  • Dehydrate until crisp, turning once. This will take approximately 12 hours

  • When dehydrated, make the chocolate coating. Melt the liquor and butter in a Pyrex jug in a pan of warm water. Add the vanilla, cacao powder, salt and sweetener

  • Let it cool so it is a good dipping thickness (roughly blood temperature - test with your finger)

  • Dip the biscuits in the chocolate and sprinkle with bee pollen. Set on greaseproof paper or the teflex sheets from the dehydrator

  • Keep in an airtight container
