Orange Buckwheat Granola

Orange Buckwheat Granola

This granola can also be made with organic apples or pears instead of oranges.

Buckwheat is gluten-free, a good source of fibre and rich in minerals and various plant compounds, especially rutin. As a result, buckwheat consumption is linked to several health benefits, including improved blood sugar control and heart health.

Serves: 8-10 servings

Ingredients:

  • 3 cups of buckwheat sprouted **

  • 3 organic oranges

  • 4 tbsp coconut oil

  • pinch sea or rock salt

  • vanilla extract or powder to taste (1 tbsp approx.)

  • Grate the zest from the oranges. Slice the peel from the oranges but include some pith aa it is full of goodness

  • Put the zest and the flesh of the oranges in the food processor with the coconut oil and pinch of salt and vanilla extract

  • Process this mixture until smooth and add to the sprouted buckwheat in a bowl and mix thoroughly

  • Dehydrate for 10-12 hours at 105 or 110 deg Fahrenheit / 40.56 or 43.33 deg Celsius or until crisp

** Soak the buckwheat in filtered water for 20-30 mins (no longer or it will go glucky). Drain, rinse and place in a colander. Rinse once a day, or twice if the weather is very warm.
