Mixed ‘Roasted’ Vegetables

This dish will keep for a few days but tastes so good it may not last that long.

This dish has surprisingly intense flavours and has a ‘cooked' texture to the vegetables.

Preparation time: 10 mins, plus 3-4 dehydrating

Serves: 4-6

Ingredients:

  • 1 courgette sliced on a mandolin

  • 250g cherry tomatoes halved

  • 2 medium red onions sliced on a mandolin

  • 1 red pepper cut into strips

  • crushed garlic to taste

  • juice of 1/2 a lemon

  • 2 tbsp olive oil

  • salt to taste

Method:

  • Put all the vegetables in a bowl. Add the lemon and oil and mix well

  • Marinate for 30-60 mins if you have the time

  • Dehydrate for 3-4 hours. This will intensify the flavours and give a 'cooked' texture to the vegetables
