Mixed ‘Roasted’ Vegetables

Full Roasted Vegetables
Ingredients:

1 courgette sliced on a mandolin

250g cherry tomatoes halved

2 medium red onions sliced on a mandolin

1 red pepper cut into strips

crushed garlic to taste

Juice of 1/2 a lemon

2T olive oil

salt to taste

Preparation:

Put all the vegetables in a bowl. Add the lemon and oil and mix well.

Marinate for 30-60 mns if you have the time.

Dehydrate for 3-4 hours.  This will intensify the flavours and give a 'cooked' texture to the vegetables.

10 mns plus 3-4 hours dehydrating.

This dish will keep for a few days but tastes so good it may not last that long.
