Coconut Ginger Kisses

A taste explosion of chocolate, coconut with a hint of ginger and chilli.

A warming snack for any time of the day - adjust the amount of ginger and chilli to suit your taste buds.

Preparation time: 10 mins

Serves: Makes about 8-10 bars, depending on size and thickness

Ingredients:

  • 1/4 cup raw cacao nibs

  • 1/4 cup raw cacao powder

  • 1 1/2 cup coconut chips

  • 3/4 cup macadamia nuts or cashews

  • 1/4 cup coconut oil

  • pinch sea salt

  • 1-2 tsp ground ginger

  • pinch cayenne or chilli powder (optional)

  • 1 1/4 tsp vanilla extract or 1 tbsp vanilla powder

  • sweeten to taste with coconut nectar, yacon syrup or stevia

Method:

  • Soften the coconut oil in the food processor. Add the other ingredients and process until broken up but not too fine

  • Taste for sweetness and add a little more stevia or yacon syrup if required

  • Form into bite sized balls. Put in the freezer or fridge to harden

  • Store in an airtight container
