Thai Slaw

Tasty and warming salad for the winter when cabbages are in season.

The health benefits of cabbage include frequent use as a treatment for constipation, stomach ulcers, headaches, obesity, skin disorders, eczema, jaundice, scurvy, rheumatism, arthritis, gout, eye disorders, heart diseases, ageing, and Alzheimer’s disease.

Preparation time: 10 mins

Serves: 4

Ingredients:

  • 3 cup cabbage, shredded finely on a mandolin or with a sharp knife

  • 3 tbsp sesame seeds

  • small bunch of fresh coriander, finely chopped

  • 2 tbsp lime juice

  • 2 tbsp hulled hemp seeds

  • 2 tbsp oil - either olive, hemp, flax or sesame

  • 1 tsp salt

  • 1 clove of garlic, crushed

  • 1/2-1 tsp of finely chopped fresh chilli

Method:

  • Combine the ingredients in a bowl

  • Mix well and season to taste
