Rhubarb & Carrot Salad

Simple and quick, but exotic.

Rhubarb, used as a medicine by the Chinese, contains calcium, potassium, magnesium, iron, manganese, selenium, copper and phosphorus.

Preparation time: 10 mins

Serves: 4

Ingredients:

  • 1cup finely chopped rhubarb

  • 1 3/4 cup finely chopped carrot

  • 1/2 an onion or a shallot, finely chopped

  • 2 handfuls freshly chopped parsley

  • sea or rock salt to taste

    Dressing:

  • 1 small avocado or 1/2 a large one

  • 2 tbsp lemon juice

  • 1 tbsp olive oil

  • 1/2 cup cashew nuts soaked

Method:

  • Blend the dressing ingredients until smooth

  • Put the salad ingredients in a salad bowl and mix with the dressing
