Ginger Biscuits

 

 

1C almonds, soaked and rinsed (dehydrated if you have a dehydrator)

1 1/2C coconut flakes

1/4C coconut palm sugar

2t ground ginger

1t clove powder

1t cinnamon powder

pinch salt

1/4C coconut oil

 

Grind the almonds and coconut flakes to a powder in a high powder blender.  Grind the palm sugar into a powder.  Place all the ingredients into a food processor and mix until combined into a dough.

 

From a ball and press out by hand onto a clean surface to about 1/4"thick.  Cut into shapes with cookie cutter (or roll into balls) and put in the fridge for at least an hour.
