Ginger Biscuits

Ginger biscuits

Serve at a tea party or take on the road.

Preparation time: 5-10 mins

Serves: Makes 12 biscuits

Ingredients:

  • 1 cup almonds, soaked and rinsed (dehydrated if you have a dehydrator)

  • 1 1/2 cup coconut flakes

  • 1/4 cup coconut palm sugar

  • 2 tsp ground ginger

  • 1 tsp clove powder

  • 1 tsp cinnamon powder

  • pinch salt

  • 1/4 cup coconut oil

Method:

  • Grind the almonds and coconut flakes to a powder in a high powder blender. Grind the palm sugar into a powder

  • Place all the ingredients into a food processor and mix until combined into a dough

  • From a ball and press out by hand onto a clean surface to about 1/4"thick

  • Cut into shapes with cookie cutter (or roll into balls) and put in the fridge for at least an hour
