Chocolate Chia Pudding

This is so jam packed full of protein and nutrition it makes a great snack or breakfast on the go.

Chia seeds are a superfood powerhouse - full of protein and easy to digest. This is a A quick dessert that can be russelled up in no time.
Delicious for breakfast!

Preparation time: 5 mins

Serves: 2-4

Ingredients:

  • 1 cup cashews, soaked for a few hours then drained

  • 2 tbsp vanilla extract

  • pinch salt

  • 1/2 cup cacao powder

  • 1/3 cup chia seeds soaked in 2 cups of water (the seeds will soak up the water in 15 mins)

  • sweetener of your choice – stevia, Lo Han, yacon syrup, honey – to your taste

Method:

  • Blend the ingredients in a high speed blender and sweetened to taste

  • Pour into wine glasses or ramekins. Leave in the fridge to firm up

  • Decorate with mint leaves, berries, borage flowers, pecan nuts or coconut chips
