Brazil Nut & Red Pepper Dip

Brazil nuts are in fact a seed rather than a nut. They are high in selenium, an important antioxidant and other important minerals.

Soaking the brazil nuts overnight or a few hours makes them easier to blend but is not necessary.

Preparation time: 5 mins

Serves: 6-8

Ingredients:

  • 1/2 cup red pepper

  • 1 tbsp lemon juice

  • 1 tbsp orange juice

  • 2-3 cloves of garlic

  • 1 cup brazil nuts soaked overnight, drained and rinsed

  • chives or parsley

Method:

  • Blend the the pepper, lemon juice, orange juice and garlic in a food processor. Add the nuts and blend until smooth

  • Stir in the chopped chives or parsley
