Kale and Avocado Salad

Kale Salad 
200g kale, stem removed and finely chopped
1 tomato, chopped
1 avocado diced
1 stalk celery
2T flax or olive oil
2t lemon juice
1t salt
 

Add the salt to the chopped kale in a bowl and massage well until the kale wilts.  Add lemon and massage again.  

Blend the avocado, oil and celery to a cream and mix with the kale.  Add the tomato and serve.


 


Massaging the kale with salt and lemon makes it more digestible.
