Butternut squash crisps

For hot and spicy crisps add cayenne pepper and garlic.

The nutritional content of squash makes it beneficial for digestion, blood pressure, and for healthy skin and hair. Squash can form the basis of a range of sweet and savoury dishes.

Preparation time: 10 mins, plus about 24-48 hours dehydration time

Serves: 6-8

Ingredients:

  • Butternut squash (or sweet potato)

  • lemon juice

  • olive oil

  • salt

Method:

  • Peel and deseed the squash. Slice thinly with a sharp knife or a mandolins

  • Add just enough lemon juice and oil to cover (equal parts). Add crushed garlic and cayenne for a spicy kick

  • Dehydrate at 115 deg Fahrenheit or 46.11 deg Celsius for 24-48 hours. The length of time will depend on the thickness of the crisps. It may take longer. Don't despair, just leave them in till they are done
