SPINACH AND AVOCADO DIP
2 cups spinach
1T lemon juice
1 clove garlic
Himalayan salt to taste
Combine ingredients in a blender, blend until smooth.
Serve with butternut squash or sweet potato crisps.
Serves4 - 6
For a spicy Indian flavour, add 1/4t curry powder, 1/8t freshly grated ginger, pinch each of chili powder, cayenne and cumin and serve with red onion bread.
