Almond superfood cookies

Almonds are rich in nutrients that help protect the heart, including unsaturated fatty acids, phytosterols, magnesium, vitamin E and copper.

Perfect mid morning or afternoon pick me up - the maca will give you energy.

Preparation time: 10-15 mins

Serves: Makes 15 cookies

Ingredients:

  • 1 cup almonds (soaked and dehydrated if you have time) ground into a flour in a high power blender

  • 3 tbsp lucuma

  • 1 tbsp maca powder

  • 1/4 tsp cinnamon powder

  • 2 tsp Ashwaganda powder (optional, but it combats stress, fatigue and lack of energy)

  • 1 tsp cacao powder

  • few pinches ginger powder

  • pinch Himalayan salt

  • 4 tbsp chia seeds (2tbsp ground in a blender and 2 tbsp whole)

  • 1/4 cup yacon syrup or coconut nectar

  • 2 tbsp cacao butter melted (approx. 100g)

    Topping:

  • approx. 3/4 cup cacao paste melted

  • Incan or goji berries

Method:

  • Add all the dry ingredients to a bowl and stir to mix. Add the yacon or coconut nectar and melted cacao butter

  • Mix with your hands to form a dough

  • Take a small amount of dough in your hand, form into a ball, press out to flatten and make an indentation on the top with your thumb or finger

  • Fill the indentation with the melted cacao paste and top with an Incan or goji berry

  • Put in the fridge for at least an hour
