Almond Superfood Cookies

 

Cookies:

1C almonds (soaked and dehydrated if you have time) ground into a flour in a high power blender

3T lucuma

1T maca powder (for energy)

1/4t cinnamon powder

2t Ashwaganda powder (optional but it combats stress, fatigue and lack of energy)

1t cacao powder

few pinches ginger powder

pinch Himalayan salt

4T chia seeds (2T ground in a blender and 2T whole)

1/4C yacon syrup or coconut nectar

2T cacao butter melted (approx 100g)

 

Topping:

approx 100g cacao paste melted

Incan or goji berries

 

Add all the dry ingredients to a bowl and stir to mix.  Add the yacon or coconut nectar and melted cacao butter.  Mix with your hands to form a dough.

Take a ball of dough in your hand, form into a ball, press out to flatten and make an indentation on the top with your thumb or finger.  

Fill the indentation with the melted cacao paste and top with an incan or goji berry.
