Beetroot/Carrot/Celeriac Salad with Fresh Mint and Chilli

 

1C beetroot julienne on a mandolin or grated

1C carrot julienne on a mandolin or grated

1C celeriac julienne on a mandolin or grated

2T olive oil

1T lemon juice

1t freshly chopped red chilli

2T finely chopped fresh mint

Himalayan or sea salt to taste

 

Combine the ingredients in a bowl.


Perfect as a first course at a dinner or lunch party.
